Why eat sourdough bread?

Sourdough bread has been experiencing a renaissance in recent years thanks to its health benefits and exceptional taste. Unlike modern baked goods with admixture of yeast, sourdough bread is prepared using natural yeast, which gives it unique properties.

What is sourdough bread?

Sourdough bread is a pastry made from flour, water and natural yeast. This process creates bread with a characteristic sour taste and dense texture. The preparation of sourdough bread is time-consuming, but the resulting product is rich in taste and nutritional value.

Difference Between Sourdough and Yeast

Leaven and yeast are both leavening agents, but they differ in several ways:

  • Yeast : A natural mixture of flour and water containing yeast and lactic acid bacteria. Sourdough ferments more slowly than yeast, which allows for a more complex breakdown of starches and proteins.

  • Yeast : A commercial product containing highly concentrated yeast. It acts more quickly, which leads to a quick rise of the dough and does not achieve the same depth of flavors as yeast.

Why eat sourdough bread?

  • Health benefits : Slow fermentation lowers the glycemic index of bread, which helps keep blood sugar levels stable and is more digestible.

  • Taste and texture : Sourdough bread has a richer, more pronounced taste and texture. It stays fresh longer and thanks to fermentation, unique aromatic substances are created that give the bread a unique taste.

  • Natural ingredients : Sourdough bread is made from purely natural ingredients without industrial additives.
